We call it a studio because we work like a workshop: few pieces, carefully considered, repeated until they come out exact.
Every recipe has a spec sheet. Potato variety, sweating time, egg ratio, setting point. Nothing is left to chance.
We are in central Granada, at the foot of the Alhambra, working with produce from the vega in short runs.
